Every finished spirit or wine carries sediment — not always literal, but always present. It's the accumulation of decisions: the grain selected and discarded, the yeast colony favored, the barrel rotated one more season. These deposits of craft rarely make it onto a label, but they define what ends up in your glass. This issue honors the layers beneath the clarity.
From a wheated bourbon built on generations of grain knowledge to a white wine still carrying the mineral charge of its terroir, today's eight selections share a common thread: they reward those willing to look past the surface. Each bottle here tells a story of what was left in and what was filtered out — and why that choice mattered.
This issue's aroma selections emphasize the layered deposits of craft — from the butterscotch sweetness of wheated grains to the mineral charge of granite-grown fruit. Train your nose to detect what settles beneath the obvious: the secondary and tertiary aromas that only emerge with patience.

Palate: Soft and round on entry, with caramel and wheat bread dominating the mid-palate. Cherry and pecan emerge as the whiskey opens, with a mild leather note adding structure. The mouthfeel is creamy without being heavy.
Finish: Medium length, with butterscotch fading into toasted oak and a whisper of maple syrup. Clean and satisfying.

Nose: Rich dried fruit and honey greet the nose, with undercurrents of dark cocoa and rosewater. A gentle maltiness sits beneath, accompanied by warm clove spice and a touch of peach.

Palate: Rich and rounded, with orchard fruit compote, milk chocolate, and warm baking spices threading through a creamy malt core; the sherry cask influence adds subtle nuttiness while bourbon oak lends caramelized sugar.
Finish: Medium-long and warming, closing on toasted oak, dried fig, and a gentle whisper of clove spice.
Cocktail — The Carlow Cloak — 2 oz The Busker Single Malt, 0.5 oz Pedro Ximénez sherry, 0.25 oz honey syrup, 2 dashes orange bitters. Stir over ice, strain into a chilled coupe, express an orange peel over the surface.

Tequila Cimarrón Reposado Tequila
Crafted at Destiladora del Valle de Tequila under NOM 1146 in Arandas—the same highland distillery behind ArteNOM 1146—Cimarrón was conceived as an unpretentious, agave-forward expression designed to prove that honest tequila needn't carry a luxury price tag.
Classification: Reposado, 100% Agave
Brand: Cimarrón
Distillery: Destiladora del Valle de Tequila (NOM 1146)
Proof: 80 proof (40% ABV)
Age: Aged 4 months in ex-bourbon barrels
Color: Pale straw gold
MSRP: $25 USD
Agave: 100% Blue Weber Agave (Agave tequilana), sourced from the Los Altos highlands of Jalisco
Cooking Method: Agave slow-cooked in traditional masonry ovens, milled, fermented with proprietary yeast, and twice-distilled in stainless steel pot stills with copper components. Rested approximately 4 months in ex-bourbon American oak barrels.
NOM: NOM 1146
Additives Free: Yes
Nose: Cooked agave leads with weight and clarity, followed by warm butterscotch, a squeeze of lime peel, and a whisper of oak. Underneath, a mineral, earthen note anchors the whole picture.
Palate: Medium-bodied and surprisingly composed for the price. Roasted agave sweetness meets caramelized banana, black pepper, and dried grass. A gentle vanilla-oak layer emerges mid-palate without covering the agave's savory backbone.
Finish: Moderate length with a clean, peppery warmth and lingering agave sweetness. Faint hints of citrus zest and toasted almond fade slowly.
Cocktail — The Arandas Highball — 2 oz Cimarrón Reposado, 0.5 oz fresh lime juice, 0.25 oz agave syrup, 3 oz chilled grapefruit soda. Build in a tall glass over ice, stir gently, and garnish with a grapefruit twist and a pinch of flaky salt on the rim.
Pair with: Grilled carne asada tacos with charred spring onions, salsa verde, and a squeeze of lime — the reposado's peppery agave core cuts through smoke and fat while echoing the char.
Awards: Double Gold, San Francisco World Spirits Competition (multiple years); consistently cited by tequila critics as a top value pick in the reposado category.
Gin Sacred Gin
Founded in 2009 by Ian Hart in his Highgate home, Sacred Spirits pioneered vacuum distillation for gin — macerating and distilling each of its twelve botanicals separately at low temperatures under glass, then blending the individual distillates to preserve aromatics that traditional heat would destroy.
Classification: London Dry Gin
Brand: Sacred Spirits
Distillery: Sacred Spirits Company
Proof: 80 proof (40% ABV)
Age: NAS
Color: Clear
MSRP: $40 USD
Style: Modern London Dry with vacuum-distilled botanical clarity
Botanicals: Juniper, coriander seed, angelica root, orris root, cardamom, nutmeg, pink grapefruit peel, lime peel, lemon peel, cassia bark, Hougari frankincense (Boswellia sacra), fresh orange peel.
Base Spirit: English wheat neutral spirit
Nose: Bright, aromatic juniper leads, wrapped in fresh citrus peel and a distinctive resinous frankincense note. Underneath, warm cardamom and nutmeg add spice, with a subtle waxy pine character.
Palate: Silky and full-bodied for the strength — juniper is generous but not aggressive, framed by pink grapefruit oils, coriander seed, and the signature Hougari frankincense that gives Sacred its unmistakable resinous depth. Cardamom, nutmeg, and a whisper of orris root add structure.
Finish: Long, dry, and gently spiced, with lingering pine resin, citrus zest, and a soft peppery warmth that fades slowly rather than clipping short.
Cocktail — The Highgate Martini — 2.5 oz Sacred Gin, 0.5 oz Sacred English Dry Vermouth, 1 dash orange bitters. Stir with ice for 30 seconds, strain into a chilled coupe, and express a pink grapefruit twist over the surface before dropping it in.
Pair with: Smoked trout on rye with crème fraîche and dill, or a plate of Marcona almonds with aged Manchego.
Awards: Double Gold, San Francisco World Spirits Competition; multiple Gold medals at The Gin Masters and IWSC.
Rum Le Rhum par Neisson
Distilled by the Neisson family on Martinique's northwestern coast since 1931, this rhum is fermented from pure cane juice grown on the estate and distilled in the distillery's iconic copper Savalle column — a fiercely traditional expression from one of the last independent family-owned agricole distilleries.
Classification: Rhum Agricole Blanc AOC Martinique
Brand: Neisson
Distillery: Distillerie Neisson
Proof: 104.6 proof (52.5% ABV)
Age: NAS (Unaged)
Color: Crystal clear
MSRP: $34
Base Ingredients: Fresh-pressed sugar cane juice from the Neisson estate
Distillation: Single-column Savalle copper still distillation; bottled unaged at 52.5% ABV under the Martinique AOC
Nose: A vivid rush of fresh-cut sugar cane, green olive brine, and white pepper, layered with lime zest, cane flower, and a mineral wisp of sea spray.
Palate: Oily and full-bodied for a blanc, coating the mouth with grassy cane juice, banana leaf, cracked black pepper, and a saline vegetal thrust; underneath runs a subtle sweetness of white peach and sugarcane wax.
Finish: Long, warming, and herbaceous, fading through anise, lime peel, and a lingering peppery burn that keeps declaring itself well after the swallow.
Cocktail — Le Carbet Ti' Punch — In a rocks glass, muddle a thick disc of lime (with peel) with 1 barspoon of cane syrup (sirop de canne). Add 2 oz Le Rhum par Neisson. Stir gently — no ice, chacun prépare sa propre mort. Optional: a single large cube if the day demands it.
Pair with: Grilled shrimp with green mango salad, or accras de morue (Antillean salt cod fritters) with a squeeze of lime.
Awards: Consistently top-scored among agricole blancs by Rhum Attitude and Rumporter; regularly cited by bartenders as a benchmark 50%+ blanc for Ti' Punch.
Red Wine Domaine du Coulet Cornas Les Terrasses du Serre 2020
Matthieu Barret farms steep, terraced granite slopes in Cornas — one of the Northern Rhône's most demanding appellations — crafting concentrated, mineral-driven Syrah with minimal intervention at his Domaine du Coulet.
Classification: Cornas AOC
Brand: Domaine du Coulet
ABV: 13.0%
Primary Varietal: Syrah
Blend: 100% Syrah
Vineyards: Les Terrasses du Serre, granite terraces in Cornas
Maturation: Whole cluster fermentation, native yeast, minimal sulfur
Color: Inky violet-black with purple rim
MSRP: $45–$60
Nose: Concentrated blackcurrant and violet dominate, with crushed stone minerality and a savory, almost gamey edge. Black cherry and a hint of cedar emerge with air, alongside subtle green herbs.
Palate: Dense and structured, with blackcurrant and cherry fruit wrapped in firm but fine-grained tannins. Cedar and toasted oak provide a frame without intruding, while a mineral thread — granite-like — runs through the mid-palate. Violet returns on the back palate.
Finish: Long and firm, with cherry, cedar, and a lasting mineral impression. The tannins grip and release slowly.
Pair with: The wine's gamey depth and dark fruit intensity pair naturally with venison's lean richness, while the blackberry sauce echoes the blackcurrant and violet on the palate.
White Wine Domaine Valette Pouilly-Fuissé Tradition 2022
Philippe Valette farms biodynamically in Pouilly-Fuissé's Chaintré commune, aging his wines far longer than convention demands — often three or more years on lees — to produce Chardonnays of uncommon depth and mineral intensity.
Classification: Pouilly-Fuissé AOC
Brand: Domaine Valette
ABV: 13%
Primary Varietal: Chardonnay
Blend: 100% Chardonnay
Vineyards: Multiple parcels in Chaintré, Pouilly-Fuissé AOC
Vinification: Whole cluster pressed, native yeast fermentation in barrel, extended sur lie aging without bâtonnage
Color: Deep gold with green-tinged highlights
MSRP: $40–$55
Nose: Ripe Golden Delicious apple and citrus zest open generously, followed by toasted hazelnut and a subtle honeyed quality. A light mineral note — chalky and clean — sits beneath, with a whisper of white flowers.
Palate: Rich and textured, with buttery weight that still retains freshness. Citrus and green apple provide lift through the mid-palate, while toasted almond and a faint vanilla note from extended lees aging add depth. The mineral backbone gives the wine its spine.
Finish: Medium-long, with citrus and toasted nut trailing into a clean, mineral-driven close. Precise and satisfying.
Pair with: The wine's buttery texture and toasted nut character complement the sweet richness of roasted lobster, while the citrus and mineral acidity cut through the brown butter's richness.
