Finish: Long and warming, with lingering clove spice, earthiness, and a woody dryness that invites another sip.

The Verdict: Kilbeggan's cask strength pot still release punches with conviction, showcasing the raw power of Ireland's oldest licensed distillery. The high proof amplifies the classic pot still spiciness without overwhelming the fruit. Add water gradually to unlock layers — this one changes shape in the glass.

Produced at the Newton family's distillery in the highlands of Arandas, Pueblo Viejo uses traditional brick ovens and a combination of roller mill and tahona-style extraction to honor the agave's full range of flavor.

Finish: Short to medium, finishing with lingering agave, a trace of pepper, and a clean mineral dryness.

The Verdict: Pueblo Viejo Reposado is one of the best-kept secrets in the tequila world. At this price, it outperforms bottles costing three times as much. The highland agave sings clearly through the restrained oak influence, making it equally at home sipped neat or anchoring a cocktail. Essential shelf stock.

Orange and coriander dominate the mid-palate, supported by a gentle peppery warmth and a floral, almost violet-like sweetness. The botanicals are individually distilled and blended, and you can taste the precision.

Finish: Medium length with juniper, orange zest, and a dry, clean fade.

The Verdict: Todd Leopold's approach — distilling each botanical separately and blending the distillates — yields a gin of unusual clarity and definition. Every element occupies its own space. This isn't a gin that shouts; it's one that articulates. Perfect for a gin and tonic where you want the spirit to lead the conversation.

Finish: Exceptionally long, with toffee, tobacco, and a persistent chocolate and oak interplay that evolves over several minutes.

The Verdict: Richard Seale continues to define what serious Barbadian rum can be. This 14-year blend of pot and column still distillates shows the depth and nuance that earned Foursquare its reputation. At cask strength, it's intense but never harsh — a rum that commands your full attention and gives back generously.

The Coudert family has farmed their monopole vineyard on the slopes of Fleurie since 1934, vinifying with whole-cluster semi-carbonic maceration and aging in concrete to preserve the granite-driven purity of their old-vine Gamay.

Palate: Juicy and medium-bodied with vibrant cherry and berry fruit, fine-grained tannins, and a granitic minerality that grounds the wine. A hint of green pepper and mint add complexity, while the acidity keeps everything taut and focused.

Finish: Medium length, finishing clean with cherry, mineral, and a lingering floral note.

The Verdict: Alain Coudert's Clos de la Roilette is one of Beaujolais's most consistent and compelling producers, and the 2022 vintage delivers the quintessence of Fleurie — it's the cru that earned its name from flowers. This is Gamay without pretense, a wine that demands nothing but a glass and a moment. Serve it slightly cool.
