Finish: Short to medium, with lingering honey and a dry, lightly grassy close. Clean and polished.

The Verdict: Mannochmore is one of Speyside's great unknowns — most of its output disappears into blends. This Flora & Fauna bottling is a rare chance to taste the distillery character on its own terms. It's lighter than fashion dictates, but that lightness is the point: precision, not power.

Pair with: The whisky's delicate floral and honey notes pair beautifully with herb-roasted chicken, where the peach undertones complement the lemon's brightness and the malt echoes the golden skin.

Once one of Belfast's great whiskey names before falling silent in 1936, Dunville's was resurrected by the Echlinville Distillery on the Ards Peninsula — the first new distillery licensed in Northern Ireland in over 125 years.

The Verdict: A masterclass in sherry-cask maturation from a revived heritage name — profound, generous, and unhurried, rewarding slow contemplation more than casual sipping.

Cocktail — The Shrouded Lamp — 2 oz Dunville's PX 12, 0.25 oz PX sherry, 2 dashes orange bitters, 1 dash chocolate bitters. Stir with ice for 25 seconds; strain into a chilled coupe. Express an orange peel over the surface and drop it in. Serve without garnish for a drink that darkens the more you look at it.

Pair with: Aged Coolea cheese with fig paste, or a slice of sticky toffee pudding with lightly salted crème fraîche.

Finish: Long and quietly complex — lingering agave fiber, black pepper, lime zest, and a cooling herbal echo that fades into stone and grass.

The Verdict: A blanco that rewards patience: what first reads as elegant restraint slowly reveals dense layers of terroir, technique, and highland character. One of the most transparent windows into what El Pandillo does best.

Cocktail — The Unlit Room — 2 oz ArteNOM 1414 Blanco, 0.75 oz fresh lime juice, 0.5 oz cucumber-mint syrup (muddle cucumber and mint into warm 1:1 simple, strain), 2 dashes celery bitters. Shake with ice, fine strain into a chilled coupe, garnish with a single mint leaf floated crown-down.

Pair with: Aguachile verde with wild shrimp, cucumber, serrano, and lime — the dish's clean heat and herbaceous brightness mirror the tequila's concealed complexity.

The Verdict: ELLC's London Dry is a study in restraint. In an era of botanical maximalism, this gin bets everything on juniper clarity and structural dryness. It's a workhorse gin — exceptional in a martini, utterly reliable in a G&T — that never tries to be more than what it is.

Palate: Full-bodied and complex. The agricole grassiness has mellowed into something more rounded — muscovado sugar and vanilla interplay beautifully. Mid-palate reveals leather and roasted coffee, with tropical fruit persisting as a sweet undercurrent throughout.

Finish: Long and contemplative, with oak tannins, dried fruit, and a final flicker of orange peel. The agricole terroir lingers beneath everything.

The Verdict: J.M's vintage releases demonstrate what happens when exceptional cane juice meets patient maturation in Martinique's volcanic humidity. This 2012 has shed the youthful fire of young agricole without losing its identity. The shadow work here is the decade of tropical aging that concentrates flavors no temperate warehouse could produce.

Pair with: The rum's chocolate and orange peel notes mirror the tart's flavors directly, while the agricole character and oak tannins cut through the richness of the ganache. The sea salt heightens everything.

The Verdict: The Faravel family farms old Grenache vines on the clay-limestone slopes beneath the Dentelles, and their La Font de Tonin cuvée captures the best of Gigondas: power with elegance, fruit with earth. This 2021 is drinking well now but will reward five to eight years of patience.

The 2023 vintage captures the estate's knack for balancing richness with freshness, delivering complexity that belies its modest price. Drink it now through 2027.
