Every spirit and wine in this lineup carries the fingerprint of combustion. Some were shaped by the interior of a flame-kissed barrel, others by peat smoke or the mineral legacy of ancient eruptions. Heat is the oldest transformative force in the maker's toolkit, and its effects are rarely subtle — they restructure sugar, unlock phenols, and leave behind aromatic signatures that no other process can replicate.
Today's eight selections span the full spectrum of that influence: bourbon aged in heavily charred staves, Scotch tempered by gentle kiln smoke, tequila roasted in stone ovens, and wines drawn from soils born of fire. Each bottle is an entry in a ledger written by heat, and each sip reveals a different chapter.
This issue's aroma palette centers on the aromatic legacy of heat — charred oak, roasted cocoa, toasted nuts, and volcanic mineral. Train your nose on these markers and you'll start recognizing the common language that fire speaks across every category in the glass.

Rum Foursquare Exceptional Cask Selection Mark XXIV 'Equipoise'
Distilled and aged entirely at the Foursquare Distillery by master distiller Richard Seale, who blends pot and column still rums aged 14 years in ex-bourbon and ex-Madeira casks with no additives.

Brand: Foursquare
Distillery: Foursquare Distillery
Proof: 120 (60% ABV)

Nose: Rich and layered, with toffee and dark chocolate dominating the opening. Dried fruit — raisin and fig — follows, alongside toasted oak and a suggestion of espresso. A leather note underpins the sweetness.
Palate: Full-bodied and remarkably balanced for the proof. Molasses and muscovado sugar form a dark, sweet base, while vanilla and coconut from the barrel aging smooth the delivery. Midpalate brings roasted coffee bean and baking spice. The texture is oily and persistent.
Finish: Very long, with leather, dark chocolate, oak char, and a slow-burning warmth that resolves into clean tobacco and dried orange peel.
Pair with: Flourless dark chocolate torte with a pinch of sea salt and espresso ganache, matching the rum's chocolate and coffee notes while its proof cuts through the richness.
Red Wine Pietradolce Etna Rosso DOC 2021
Grown on the volcanic north slope of Mount Etna at elevations above 700 meters by Michele Faro, whose ungrafted pre-phylloxera vines root directly into ancient lava flows and ash-rich terraces.
Classification: Etna Rosso DOC
Brand: Pietradolce
ABV: 14%
Primary Varietal: Nerello Mascalese
Blend: 90% Nerello Mascalese, 10% Nerello Cappuccio
Vineyards: North slope of Mount Etna, Contrada Rampante, 700-900m elevation, volcanic soils
Maturation: Hand-harvested, destemmed, fermented in stainless steel with native yeasts, gentle extraction
Color: Translucent garnet with ruby rim
MSRP: $28–$38
Nose: Red cherry and wild strawberry dominate, underscored by a distinctive minerality that speaks of volcanic soil. Violet and dried herb notes add complexity, with a subtle smoky quality emerging with air.
Palate: Light to medium-bodied but intensely focused, with tart cherry and cranberry offset by a savory, almost stony minerality. Fine-grained tannins provide structure without weight. A hint of dried rose petal and gentle earthiness carry through.
Finish: Lingering and lifted, with cherry, volcanic mineral, and a whisper of violet that refuses to let go.
Pair with: Chargrilled swordfish steaks alongside Sicilian caponata — the sweet-sour vegetable medley bridges the wine's fruit and mineral elements while the char complements its volcanic character.
White Wine Benanti Etna Bianco Superiore Pietra Marina 2022
Produced by the Benanti family from 80-year-old Carricante vines planted at 950 meters on Etna's eastern slope in Contrada Monte Serra, where the volcanic soils and altitude produce one of Italy's most age-worthy whites.
Classification: Etna Bianco Superiore DOC
Brand: Benanti
ABV: 12.5%
Primary Varietal: Carricante
Blend: 100% Carricante
Vineyards: Contrada Monte Serra, eastern slope of Mount Etna, 950m elevation, volcanic soils rich in ash and mineral deposits
Vinification: Hand-harvested, whole-cluster pressed, spontaneous fermentation in stainless steel, extended lees aging
Color: Pale gold with green-tinged highlights
MSRP: $55–$75
Nose: Intensely mineral — wet stone and crushed flint — with layers of white peach, citrus blossom, and a saline edge. Lemon zest and a faint almond quality emerge with time.
Palate: Medium-bodied with razor-like acidity and a tightly wound structure. Green apple and citrus dominate the palate, wrapped in a chalky, almost ashy minerality that defines the volcanic terroir. A honeyed richness develops midpalate without softening the wine's essential tension.
Finish: Exceptionally long, with persistent mineral salinity, citrus pith, and a fading note of toasted almond.
Pair with: Spaghetti ai ricci di mare — the sea urchin's briny sweetness and the wine's saline minerality create a natural partnership, with a drizzle of good olive oil and a hit of chili flake to tie it together.
Awards: Tre Bicchieri from Gambero Rosso (multiple vintages)
