The Still & The Vine by School of Wine and Spirits
Issue No. 77 — June 11, 2026
Your daily discovery of 8 exceptional wines and spirits

There's a moment at midday when shadows disappear entirely. No angle to hide behind, no flattering light. It's the most honest hour — and the most unforgiving. The bottles in this issue share that quality: they were built to stand in full sun, their construction transparent, their character undeniable.

From a high-rye bourbon that dares you to find a weak note to a white wine that trades oak for pure varietal nerve, today's lineup rewards close attention. Pour slowly, taste deliberately, and see what the noon light reveals. See every bottle we've reviewed to date at reviews.schoolofwineandspirits.com. Don't see your special bottle? Bourbon Widow Jane 10 Year Old Straight Bourbon Whiskey

Widow Jane 10 Year Old Straight Bourbon Whiskey

Blended in Red Hook, Brooklyn, from aged Kentucky bourbon and proofed with limestone-rich water drawn from the Rosendale Mines of upstate New York, Widow Jane bridges Northern craft sensibility with deep Southern tradition.

Classification: Straight Bourbon Whiskey

Brand: Widow Jane

Distillery: Widow Jane Distillery

Proof: 91 (45.5% ABV)

Age: 10 Year

Color: Burnished copper with orange-gold edges

MSRP: $65–$80

Mash Bill: Blend of high-corn and high-rye bourbon mash bills

Barrel Type: New charred American oak

Nose: Rich butterscotch and toasted pecan arrive first, followed by a second wave of dried cherry and worn leather. A gentle cornbread sweetness sits beneath everything, anchoring the more volatile aromatics.

Palate: The entry is full and buttery, with caramel rolling into baking spice and charred oak. Midpalate delivers ripe cherry and a pronounced vanilla cream, while rye-driven pepper builds toward the back.

Finish: Long and warming, with maple syrup and tobacco lingering alongside fading oak tannins.

The Verdict: Widow Jane's sourced 10-year blend is a study in balance — neither too sweet nor too spicy, with enough barrel influence to show its age without tasting over-oaked. It drinks well above its proof and rewards patience in the glass.

Cocktail — Noon Old Fashioned — 2 oz Widow Jane 10 Year · 0.25 oz demerara syrup · 2 dashes Angostura bitters · 1 dash orange bitters · Stir over a large ice cube, express an orange peel over the glass.

Pair with: Smoked brisket with a coffee-chili rub

Scotch Whisky Glenburgie 15 Year Old Ballantine's Single Malt Series

Glenburgie 15 Year Old Ballantine's Single Malt Series

Tucked away near Forres in Morayshire, Glenburgie has spent most of its 200-year life as a blending workhorse for the Ballantine's empire, making its solo single malt releases a rare chance to taste the distillery's voice unmasked.

Classification: Single Malt Scotch Whisky

Brand: Ballantine's

Distillery: Glenburgie Distillery

Proof: 80 (40% ABV)

Age: 15 Year

Color: Pale gold with straw highlights

MSRP: $55–$70

Region: Speyside

Mash Bill: 100% malted barley

Distillation: Double distilled in copper pot stills

Maturation: Aged 15 years in American oak ex-bourbon casks

Cask Type: Ex-bourbon American oak

Peat Level (PPM): Unpeated

Chill-Filtered: Chill filtered

Nose: Ripe peach and honey dominate the opening, joined by a creamy malt backbone and subtle floral rosewater notes. A whisper of green grass keeps it bright and lifted.

Palate: Silky and medium-bodied, with buttery vanilla custard leading to orchard fruit and a gentle hazelnut nuttiness. Light clove spice emerges as it develops, adding structure without heat.

Finish: Clean and moderately long, fading through malt and a final touch of honey.

The Verdict: One of Speyside's quieter distilleries finally gets its solo turn. This 15-year Glenburgie is unapologetically gentle, but there's real complexity hiding in that softness — a malt that asks you to lean in rather than brace yourself.

Cocktail — Speyside Highball — 2 oz Glenburgie 15 · 4 oz chilled soda water · Garnish with a lemon twist · Build in a tall glass over ice.

Pair with: Honey-glazed salmon with dill

Irish Whiskey Lough Gill Athrú Annacoona 14 Year Old Single Malt Irish Whiskey

Lough Gill Athrú Annacoona 14 Year Old Single Malt Irish Whiskey

Named for Annacoona, a mountainside overlooking Lough Gill in Ireland's northwest, this whiskey was sourced and matured under the direction of the distillery's founders as their first releases while their own new-make spirit comes of age.

Classification: Single Malt Irish Whiskey

Brand: Athrú

Distillery: Lough Gill Distillery

Proof: 86 (43% ABV)

Age: 14 Year

Color: Deep amber with mahogany edges

MSRP: $85–$110

Mash Bill: 100% malted barley

Distillation: Triple distilled in Copper Pot Stills

Maturation: Aged 14 years, finished in oloroso sherry casks

Chill-Filtered: Non-chill filtered

Nose: Dried fruit and dark cocoa open the aroma, layered with oloroso sherry sweetness and warm clove spice. Underneath there's a soft earthiness and a hint of orange peel.

Palate: Rich and full, delivering waves of caramel, dried fig, and hazelnut praline. The sherry influence is prominent but well-integrated, with vanilla and woody oak tannins providing scaffolding. A subtle smoky undercurrent adds intrigue.

Finish: Long and warming, with lingering cocoa, dried fruit, and gentle spice.

The Verdict: Athrú sources exceptional aged stock and finishes it with real intention. The Annacoona 14-year is sherry-forward without being syrupy, offering the kind of depth that single malt Ireland is increasingly known for. It handles scrutiny well — no thin spots, no borrowed sweetness.

Cocktail — Sligo Sour — 2 oz Athrú Annacoona · 0.75 oz lemon juice · 0.5 oz fig syrup · 1 egg white · Dry shake, then shake with ice, strain into a coupe.

Pair with: Dark chocolate torte with sea salt

Tequila Lote Maestro Añejo

Lote Maestro Añejo

Produced in small lots at a family-run distillery in Jalisco's lowlands, Lote Maestro uses traditional brick ovens to roast highland agave before aging the distillate in lightly charred American oak barrels for 18 months.

Classification: Añejo Tequila

Brand: Lote Maestro

Distillery: Destiladora del Valle de Tequila

Proof: 80 (40% ABV)

Age: 18 Months

Color: Deep burnished gold

MSRP: $60–$75

Agave: 100% Blue Weber Agave (Highland)

Cooking Method: Brick oven cooked, roller mill extraction, double distilled in copper pot stills

NOM: NOM 1438

Additives Free: Yes

Nose: Cooked agave and butterscotch lead, with warm cinnamon and toasted oak layered beneath. A hint of dark chocolate and vanilla rounds out the aromatics.

Palate: The entry is rich and slightly honeyed, with roasted agave asserting itself against caramel and dried fruit. Oak influence is pronounced but clean, and a peppery spice builds through the midpalate. Touches of almond appear late.

Finish: Medium-long with lingering pepper, vanilla, and a fading agave sweetness.

The Verdict: Lote Maestro quietly delivers an añejo that respects the agave rather than burying it under barrel char. The oak and spirit negotiate honestly — you taste the conversation between them. A strong pick for sipping neat when you want tequila that doesn't pretend to be whiskey.

Cocktail — Añejo Manhattan — 2 oz Lote Maestro Añejo · 1 oz sweet vermouth · 2 dashes mole bitters · Stir with ice, strain into a coupe, garnish with a Luxardo cherry.

Pair with: Mole negro with braised chicken

Gin Wolfrest Gin

Wolfrest Gin

Distilled at the Roner family's facility in Termeno, South Tyrol — one of Italy's oldest distilleries, operating since 1946 — Wolfrest sources wild juniper and alpine botanicals from the surrounding Dolomite foothills.

Classification: Dry Gin

Brand: Wolfrest

Distillery: Roner Distillery

Proof: 92 (46% ABV)

Age: NAS

Color: Crystal clear

MSRP: $40–$55

Style: Dry Gin

Botanicals: Juniper, coriander, angelica root, lemon peel, violet, ginger, liquorice, black pepper, alpine herbs

Base Spirit: Grain Neutral Spirit

Distillation: Pot distilled with vapor infusion of botanicals

Nose: Pine-forward juniper immediately announces itself, balanced by fresh lemon zest and a dusting of coriander seed. Deeper sniffs reveal violet and a subtle earthy angelica root.

Palate: Clean and structured, with juniper driving through the center while citrus and floral elements broaden the midpalate. Ginger warmth and a peppery bite create texture, and a whisper of liquorice sweetens the back end.

Finish: Medium-length, drying on juniper and angelica with a final flicker of violet.

The Verdict: From the Italian Alps, Wolfrest is a gin that knows what it is: juniper-led, mountain-clean, and unapologetically classic. The alpine botanicals bring a crispness that feels almost mineral. It performs beautifully in a Martini but has enough personality to drink on ice with just a twist.

Cocktail — Alpine Martini — 2.5 oz Wolfrest Gin · 0.5 oz dry vermouth · 1 dash lavender bitters · Stir with ice, strain into a chilled coupe, garnish with a lemon twist.

Pair with: Bresaola with shaved Parmigiano and arugula

Rum Plantation Single Cask Haiti 2013

Plantation Single Cask Haiti 2013

Distilled at Haiti's Chelo Distillery from fresh cane juice in column stills, this rum was aged in the Caribbean heat before being shipped to Maison Ferrand in Cognac for a secondary maturation and single cask selection.

Classification: Single Cask Aged Rum

Brand: Plantation

Distillery: Sourced

Proof: 97.8 (48.9% ABV)

Age: 9 Year

Color: Rich amber with copper highlights

MSRP: $55–$70

Base Ingredients: Fresh sugarcane juice

Distillation: Blended from Multiple Sources

Nose: Tropical fruits and overripe banana burst from the glass, followed by agricole-like grassy notes and a funky, almost leathery undertone. Brown sugar and vanilla round out the deeper layers.

Palate: The entry is bold and expressive — tropical fruit compote meets muscovado sugar and roasted coffee. The midpalate turns earthier, with oak structure and dried fruit providing weight. A citrus brightness keeps everything from becoming ponderous.

Finish: Long and warming, with lingering coffee, tobacco, and a final exhale of tropical fruit.

The Verdict: Haitian rum occupies a space between agricole's grassiness and molasses-based rum's depth, and this single cask bottling captures that duality perfectly. The dual aging — tropically in Haiti, then finished in France — adds layers without erasing the distillery's character. It's wild but controlled, funky but polished.

Cocktail — Port-au-Prince Daiquiri — 2 oz Plantation Haiti 2013 · 0.75 oz lime juice · 0.5 oz cane syrup · Shake with ice, strain into a chilled coupe.

Pair with: Jerk-spiced pork belly with pineapple salsa

Red Wine Domaine Santa Duc Gigondas Tradition 2021

Domaine Santa Duc Gigondas Tradition 2021

Yves Gras, third-generation vigneron at Domaine Santa Duc in Gigondas, farms old-vine Grenache on the limestone slopes of the Dentelles de Montmirail using organic methods, fermenting with indigenous yeasts in concrete and aging in large neutral oak.

Classification: Gigondas AOC

Brand: Domaine Santa Duc

ABV: 14.5%

Primary Varietal: Grenache

Blend: 80% Grenache, 10% Syrah, 10% Mourvèdre

Vineyards: Old vines on limestone slopes, Dentelles de Montmirail

Maturation: Destemmed, fermented in concrete with indigenous yeasts, gentle extraction

Color: Deep garnet with purple rim

MSRP: $35–$50

Nose: Dark berry fruit and crushed violet open the bouquet, with garrigue herbs, cracked black pepper, and a savory gamey quality emerging underneath. A faint whiff of cedar adds structure to the aromatics.

Palate: Dense and concentrated, with blackcurrant and cherry compote framed by fine-grained tannins. The midpalate introduces a minerally, almost stony quality alongside warm toasted notes. Violets persist throughout, keeping the heavier fruit honest.

Finish: Long and savory, with fading pepper, cedar, and a final lift of wild herbs.

The Verdict: Yves Gras farms some of Gigondas' oldest Grenache vines, and that pedigree shows here. The 2021 vintage gave concentration without heaviness, and this bottling captures the sunbaked terroir of the Dentelles de Montmirail with transparency and precision. A serious southern Rhône at a fair price.

Pair with: Lamb shoulder braised with rosemary and olives

White Wine Domaine Skouras Moscofilero 2023

Domaine Skouras Moscofilero 2023

George Skouras founded his eponymous domaine in 1986, planting vineyards at over 650 meters elevation on the Mantinia plateau of the Peloponnese, where cool nights preserve the Moscofilero grape's signature aromatics and snapping acidity.

Classification: PDO Mantinia

Brand: Domaine Skouras

ABV: 12%

Primary Varietal: Moscofilero

Blend: 100% Moscofilero

Vineyards: High-altitude vineyards at 650+ meters, Mantinia plateau

Vinification: Temperature-controlled fermentation in stainless steel, early bottling to preserve freshness

Color: Pale straw with greenish reflections

MSRP: $15–$22

Nose: Lifted floral rose petal and fresh-cut grass announce a distinctly aromatic style, with citrus blossom and a subtle green apple crispness underneath. There's a faint mineral note that suggests the high-altitude vineyard origins.

Palate: Light-bodied and refreshing, with tart citrus and gooseberry driving the entry. The midpalate opens into honeydew melon and delicate violet, held taut by bright acidity. Clean and precisely structured.

Finish: Short to medium, finishing crisp with lingering citrus and a floral echo.

The Verdict: Moscofilero is one of Greece's most distinctive white grapes, and Skouras' version is a textbook expression — aromatic, lively, and bone-dry. The high-altitude Mantinia plateau gives the wine a nerviness that keeps it energized despite its gentle body. An ideal warm-weather pour that punches well above its price.

Pair with: Grilled octopus with lemon and capers
