Dan Garrison planted his flag in the Texas Hill Country in 2006, building his distillery from limestone and stubbornness on a ranch where summer barrel temperatures regularly exceed 130°F, accelerating extraction to a pace that Kentucky distillers would find alarming.

Luca Gargano of Velier personally selects casks from Hampden Estate, Jamaica's most ester-rich distillery, where open-air fermentation and traditional copper pot stills have produced some of the world's most intensely flavored rums since 1753.

The Parcé brothers, Marc and Thierry, farm precipitous schist terraces above the Mediterranean in Banyuls-sur-Mer, where their grandfather Léon established the domaine and the vine rows are so steep that everything must be done by hand.
