The Still & The Vine by School of Wine and Spirits
Issue No. 145 — August 18, 2026
Your daily discovery of 8 exceptional wines and spirits

Patience is not passive. It is the distiller checking barrels at dawn, the winemaker resisting the urge to bottle too soon, the blender holding back a cask because the whiskey is not yet ready to speak. The bottles in this issue share a common thread: each one exists because someone chose the long way around, trusting that restraint would yield something richer than haste ever could.

From a Kentucky bourbon that earned its complexity through extended oak contact to a Martinique rhum that quietly deepened in tropical warehouses, today's selections celebrate the discipline of delay. These are not showpieces — they are working examples of what happens when craft meets calendar.

Today's aroma training focuses on the markers of patience — the aromas that develop only with extended aging, careful cask management, and the willingness to let nature take its course. From charred oak and dried fruit to toffee and violet, these are the scents that time leaves behind.

Bourbon Jefferson's Reserve Very Old Very Small Batch Kentucky Straight Bourbon Whiskey

Jefferson's Reserve Very Old Very Small Batch Kentucky Straight Bourbon Whiskey

Founded by father-and-son Chet and Trey Zoeller, Jefferson's built its reputation not on distilling but on the artful selection and marriage of mature Kentucky barrels — a curator's approach in an industry obsessed with pedigree.

Classification: Kentucky Straight Bourbon Whiskey (blended straight bourbon)

Brand: Jefferson's

Distillery: Sourced and blended by Jefferson's (Kentucky Artisan Distillery, Crestwood, KY)

Proof: 90.2 proof (45.1% ABV)

Age: NAS (blend of bourbons up to 15+ years)

Color: Deep burnished amber with copper highlights

MSRP: $55

Mash Bill: Undisclosed

Barrel Type: New charred oak

Nose: A slow-blooming bouquet of toffee, dried orange peel, and old leather-bound books, with baking spice and a whisper of pipe tobacco drifting upward as the glass warms.

Palate: Rounded and unhurried — brown sugar melts into cinnamon-stewed apple, followed by nutmeg, roasted pecan, and a savory ribbon of char-touched oak. Mid-palate reveals dried cherry and a faint, honeyed maple sweetness.

Finish: Long and gently escalating, with warming clove, toasted almond, and a lingering ember of dry oak and cocoa that builds rather than fades.

The Verdict: A composed, contemplative bourbon that embodies slow heat — approachable on entry but with depth that unfurls over minutes in the glass. A quiet benchmark of the blended-bourbon craft.

Cocktail — The Slow Ember — 2 oz Jefferson's Reserve, 0.25 oz demerara syrup, 2 dashes Angostura bitters, 1 dash orange bitters. Stir over a single large cube for 40 seconds; strain into a rocks glass over fresh ice. Express an orange peel and drop it in. Rest 60 seconds before the first sip.

Pair with: Slow-braised short ribs with a dark cherry reduction, or aged Gouda with candied pecans and fig jam.

Awards: Double Gold, San Francisco World Spirits Competition; consistently high marks from Jim Murray's Whisky Bible and Whisky Advocate reviews

Scotch Whisky Glenfarclas 15 Year Old Highland Single Malt Scotch Whisky

Glenfarclas 15 Year Old Highland Single Malt Scotch Whisky

Owned by the Grant family since 1865 — one of the few remaining independent family-owned distilleries in Scotland — Glenfarclas sits at the foot of Ben Rinnes in Speyside and has championed sherry cask maturation for over a century.

Classification: Highland Single Malt Scotch Whisky

Brand: Glenfarclas

Distillery: Glenfarclas Distillery

Proof: 92 (46% ABV)

Age: 15 Year

Color: Polished mahogany with bronze edges

MSRP: $55–$75

Region: Speyside

Mash Bill: 100% Malted Barley

Distillation: Double distilled in copper pot stills

Maturation: Aged 15 years in a combination of refill and first-fill oloroso sherry casks

Cask Type: Oloroso Sherry

Peat Level (PPM): Unpeated

Chill-Filtered: No

Nose: Sherry-soaked dried fruit and honey dominate the opening, giving way to dark chocolate and a hint of orange peel. Beneath that sits a quiet maltiness and the faintest wisp of earthy oak.

Palate: Rich and mouth-coating, with caramel and stewed plums leading. Mid-palate brings clove spice and hazelnut, with an elegant creaminess that the sherry cask influence provides. Not heavy — balanced and measured.

Finish: Medium-long, with dried fruit and cocoa fading into a gentle woody warmth. A lingering sweetness stays on the tongue.

The Verdict: Glenfarclas at fifteen years hits a sweet spot in their range — enough sherry influence to be expressive, enough restraint to remain elegant. A family-owned distillery that lets time and wood do the talking, bottled at a sensible strength.

Cocktail — Heather Rob Roy — 2 oz Glenfarclas 15 · 1 oz sweet vermouth · 2 dashes orange bitters · Stir with ice, strain into a coupe, garnish with a brandied cherry.

Pair with: A dense, flourless dark chocolate torte finished with flaky Maldon sea salt and a drizzle of aged balsamic. The sherry-cask whisky amplifies the chocolate's depth while the salt bridges the two.

Awards: Gold Medal, International Wine & Spirit Competition 2022

Irish Whiskey West Cork 16 Year Old Single Malt Irish Whiskey

West Cork 16 Year Old Single Malt Irish Whiskey

Founded in 2003 by three friends in the fishing village of Skibbereen, West Cork Distillers has grown from a modest start-up into Ireland's largest independent distillery, sourcing water from the Ilen River that flows past their front door.

Classification: Single Malt Irish Whiskey

Brand: West Cork

Distillery: West Cork Distillers

Proof: 80 (40% ABV)

Age: 16 Year

Color: Deep gold with amber accents

MSRP: $75 - $90

Mash Bill: 100% Malted Barley

Distillation: Triple distilled in copper pot stills

Maturation: Aged 16 years in ex-bourbon barrels

Chill-Filtered: No

Nose: Honeyed orchard fruit and vanilla rise first, followed by a buttery richness and gentle dried fruit. A subtle earthy note and distant floral quality keep it interesting.

Palate: Smooth and well-integrated, with caramel and baked peach leading the way. The oak is present but restrained, offering woody warmth and a gentle almond character. Mid-palate shows cocoa and light clove spice.

Finish: Medium-long, with vanilla, dried fruit, and a soft woody fade. Elegant and unhurried.

The Verdict: Sixteen years of patience from a relatively young distillery yields a whiskey that punches well above its visibility. West Cork demonstrates that time and good cask selection can compete with the bigger names in Irish whiskey — this is understated maturity at an honest price.

Cocktail — West Cork Gold Rush — 2 oz West Cork 16 Year · 0.75 oz honey syrup · 0.75 oz fresh lemon juice · Shake with ice, strain into a rocks glass over fresh ice, garnish with a lemon wheel.

Pair with: A wedge of 24-month aged Gouda served with raw honeycomb and toasted walnuts. The whiskey's butterscotch richness echoes the caramel notes in the cheese, while the honeycomb amplifies both.

Tequila Fuenteseca Reserva Extra Añejo 8 Year

Fuenteseca Reserva Extra Añejo 8 Year

Created by Enrique Fonseca, one of Mexico's most respected agave growers and tequila producers, Fuenteseca is a small-batch project dedicated to exploring the outer limits of tequila aging using carefully selected highland agave.

Classification: Extra Añejo Tequila

Brand: Fuenteseca

Distillery: Destiladora San Nicolas (La Tequileña)

Proof: 86 (43% ABV)

Age: 8 Year

Color: Deep amber with mahogany tones

MSRP: $200–$260

Agave: 100% Blue Weber Agave (Highland, Jalisco)

Cooking Method: Slow-cooked in traditional stone ovens, tahona-crushed, naturally fermented

NOM: NOM 1146

Additives Free: Yes

Nose: Layers of cooked agave and butterscotch emerge slowly, joined by toasted oak, dried tobacco, and a subtle citrus brightness. There is a dark chocolate undertone that deepens with time in the glass.

Palate: Dense and complex, with caramel and vanilla giving way to leather, cinnamon, and a honeyed sweetness. The agave character remains remarkably intact for its age — a testament to careful barrel selection. Oak spice anchors the mid-palate without becoming tannic.

Finish: Very long, with tobacco, vanilla, and a lingering mineral quality. The agave whispers through to the end.

The Verdict: Fuenteseca's philosophy is patience made liquid. Eight years in oak is an eternity for tequila, yet the agave never fully surrenders. This is a spirit for those who appreciate the tension between barrel and plant — and the wisdom of knowing when each has given enough.

Pair with: Slow-braised short ribs in Oaxacan mole negro, with its layers of dried chiles, chocolate, and spice. The tequila's aged complexity and chocolate notes intertwine seamlessly with the deep, earthy sauce.

Awards: 96 Points, Tasting Panel Magazine

Gin Capreolus Garden Tiger Gin

Capreolus Garden Tiger Gin

Barney Wilczak founded Capreolus Distillery in the Cotswolds with a background in eau de vie production, applying a fruit distiller's obsessive precision to each small batch of gin made in his bespoke copper still.

Classification: Distilled Dry Gin

Brand: Capreolus

Distillery: Capreolus Distillery

Proof: 96 (48% ABV)

Age: NAS

Color: Crystal clear

MSRP: $55–$70

Style: London Dry style

Botanicals: Juniper, coriander seed, angelica root, orris root, lemon peel, violet petals, grapefruit peel, black pepper

Base Spirit: Neutral grain spirit

Distillation: Vapor-infused and pot-distilled in small batches

Nose: A striking bouquet of juniper and fresh coriander seed, layered with a gentle violet floral character and a distinct herbaceous quality. There is a brightness — almost a meadow quality — that sets it apart from heavier gins.

Palate: Clean and precise, with piney juniper leading into a wave of angelica root and orris root earthiness. Citrus arrives mid-palate as lemon zest and a whisper of grapefruit, while a faint peppery warmth develops toward the back.

Finish: Medium, with lingering juniper, a dry floral fade, and a clean, almost mineral finish. Nothing wasted.

The Verdict: Capreolus is best known for their fruit eau de vie, and that distiller's discipline shows in their gin work. Every botanical is articulated rather than blurred. Garden Tiger is a gin that rewards the attentive palate — each sip reveals a new layer without ever feeling cluttered.

Cocktail — Garden Tiger Collins — 2 oz Capreolus Garden Tiger Gin · 1 oz fresh lemon juice · 0.75 oz elderflower syrup · Club soda · Build in a tall glass over ice, top with soda, garnish with a sprig of thyme.

Pair with: Grilled halloumi cheese over a salad of fresh mint, basil, arugula, and shaved radish, dressed with lemon vinaigrette. The gin's herbal and citrus character mirrors the freshness of the plate.

Rum Chairman's Reserve Spiced Rum

Chairman's Reserve Spiced Rum

Crafted at St. Lucia Distillers in the volcanic Roseau Valley, this spiced expression is built on the same acclaimed aged rum base as the flagship Chairman's Reserve, then infused with locally sourced botanicals including cinnamon, clove, nutmeg, allspice, and bitter orange peel through traditional maceration.

Classification: Spiced Rum (blend of pot and column still)

Brand: Chairman's Reserve

Distillery: St. Lucia Distillers

Proof: 80 proof (40% ABV)

Age: NAS (aged rum base, typically 3-6 years)

Color: Warm amber with copper highlights

MSRP: $30

Base Ingredients: Molasses from Caribbean sugarcane, infused post-distillation with Saint Lucian spices and botanicals

Distillation: Blend of pot still and Coffey column still rums aged in ex-bourbon barrels, then infused with a proprietary blend of spices including cinnamon, clove, nutmeg, allspice, vanilla, and bitter orange peel

Nose: Warm vanilla pod and toasted coconut lead, followed by cinnamon bark, orange peel, and a gentle waft of nutmeg. Underlying notes of caramelized sugar and clove suggest the aged rum base beneath the spice infusion.

Palate: A soft, rounded entry of vanilla cream and coconut shavings gives way to lively cinnamon and clove heat that builds slowly. Mid-palate reveals bitter orange, allspice, and a whisper of bay leaf, all supported by molasses sweetness that never tips into cloying.

Finish: Medium length with lingering baking spice, dried orange peel, and a final glow of vanilla-tinged warmth. The heat rises gradually rather than snapping — genuinely slow.

The Verdict: A craft-distilled spiced rum that respects the base spirit — an ideal sipper for cool evenings and a transformative cocktail component that outclasses its price bracket.

Cocktail — Volcano's Ember — 2 oz Chairman's Reserve Spiced Rum, 0.75 oz fresh lime juice, 0.5 oz honey syrup (2:1), 2 dashes Angostura bitters, 3 oz hot black tea. Combine in a heatproof mug, stir gently, and garnish with an orange peel studded with three cloves.

Pair with: Grilled pineapple with brown-sugar rum glaze, or a slice of dark chocolate flourless cake with sea salt.

Awards: Multiple medals at the International Sugar Cane Spirits Festival; consistently recommended by drinks critics as a benchmark craft spiced rum.

Domaine de la Vieille Julienne Châteauneuf-du-Pape Rouge 2020

Classification: Châteauneuf-du-Pape AOC

Brand: Domaine de la Vieille Julienne

ABV: 14.5%

Primary Varietal: Grenache

Blend: Grenache, Mourvèdre, Syrah, Cinsault, Counoise

Vineyards: Old vines across multiple parcels on galets roulés soils in Châteauneuf-du-Pape

Maturation: Whole-cluster fermentation, organic viticulture, no fining or filtration

Color: Dense garnet with violet rim

MSRP: $55–$75

Nose: Dark cherry and blackcurrant lead, layered with dried violets, crushed herbs, and a distinct garrigue quality. Underneath sits toasted spice and a trace of cedar.

Palate: Rich and concentrated without being heavy. Cherry and berry fruit dominate, supported by fine-grained tannins and a mineral backbone. Mid-palate brings gamey complexity and a hint of leather, with cedar and toasted notes adding structure.

Finish: Long and savory, with violet, cherry, and a gentle woody warmth that lingers. The tannins resolve cleanly.

The Verdict: Vieille Julienne's organic farming and old-vine grenache produce a Châteauneuf with real depth and terroir expression. The 2020 vintage shows exceptional balance — power without weight, complexity without noise. One of the quieter great estates in the appellation.

Pair with: Slow-roasted lamb shoulder rubbed with rosemary, thyme, and garlic, served with ratatouille and olive oil-roasted potatoes. The wine's herbal complexity and gamey depth are a natural companion to the lamb.

Awards: 94 Points, Robert Parker's Wine Advocate

White Wine Domaine Huet Vouvray Le Clos du Bourg Sec 2023

Domaine Huet Vouvray Le Clos du Bourg Sec 2023

Domaine Huet has been biodynamic since 1990, tending three legendary parcels of Chenin Blanc on the tuffeau limestone slopes above the Loire River in Vouvray, where the Hwang family continues the vision of Gaston Huet.

Classification: Vouvray AOC Sec

Brand: Domaine Huet

ABV: 13%

Primary Varietal: Chenin Blanc

Blend: 100% Chenin Blanc

Vineyards: Le Clos du Bourg, a walled vineyard on clay-silex over tuffeau limestone in Vouvray

Vinification: Biodynamic viticulture, indigenous yeast fermentation, minimal intervention

Color: Pale gold with green-tinged highlights

MSRP: $40–$55

Nose: Ripe apple and citrus zest greet the glass, followed by honeyed floral notes and a chalky minerality. There is a subtle herbal quality — almost chamomile — beneath the fruit.

Palate: Precise and textured, with green apple and citrus driving the mid-palate. The wine has real weight without heaviness, built on a mineral spine that gives it structure. A touch of honey and beeswax adds complexity, while the acidity keeps everything taut and fresh.

Finish: Long and mineral-driven, with apple and citrus fading into a clean, chalky persistence. The finish invites the next sip.

The Verdict: Huet's biodynamic Chenin Blanc from Le Clos du Bourg is one of the great expressions of Vouvray terroir. The 2023 sec shows the concentration of old vines and the precision of careful winemaking. This is Loire Valley Chenin at its most expressive and age-worthy, even in its youth.

Pair with: Seared diver scallops with a classic beurre blanc sauce, served alongside wilted watercress and shaved fennel. The wine's acidity and mineral tension cut through the butter while its apple and honey notes complement the sweetness of the shellfish.

Awards: 93 Points, Vinous
